Banana Pecan Pancakes

I'm not normally a pancake fan, but these could definitely change that! They're a cross between banana bread and pancakes. My rating: 4 out of 5.

Banana Pecan Pancakes

2 bananas
1 egg
1 pint buttermilk
1/2 tsp vanilla
3/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 Tbsp sugar
1 cup flour
1/4 cup pecans, finely chopped

Mash bananas with a fork. Mix together bananas, buttermilk, vanilla, and egg in a medium bowl.

Add baking powder, baking soda, salt, and sugar. Stir well.

Add flour. Stir until it is all incorporated.

Fold in pecans.

Pour 1/3 cup at a time into a hot pan and cook like pancakes. Makes 8 pancakes.

While I was in the islands this winter, I ate a ton of banana pancakes with macadamia nuts and coconut syrup! ONO! (delicious in Hawaiian) (have you heard Jack Johnson's song "Banana Pancakes"?) You've made me crave them again. I think I will be making these this weekend. Good idea.

I'll have to try these. They look delicious. I'm a whole wheat flour kinda girl, so I may try that with this recipe.

I LOVE pancakes. My kids like banana with chocolate chips, but these look good for my husband and me. Off to find some more yummies.
