Seven Layer Dip
- Layer 1: 16 oz vegetarian refried beans
- Layer 2: 3 ripe medium avocados, smashed
2 tsp lemon juice
1/4 tsp salt
1/8 tsp black pepper - Layer 3: 1 cup sour cream
1/2 cup mayonnaise
1 pkg taco seasoning mix - Layer 4: Grated monterey jack and cheddar cheeses
- Layer 5: Two chopped roma tomatoes
- Layer 6: Four green onions, chopped
- Layer 7: One small can sliced olives
Mix the ingredients of each layer separately and then layer in a 8" or 9" square pan.
Cover with plastic wrap and chill overnight.
Serve with tortilla chips.
