Peanut Butter Banana Cookies
2 very ripe bananas, mashed
1/2 cup chunky peanut butter
1/4 cup brown sugar
1/2 cup white sugar
1 tsp baking powder
1/8 tsp salt
1 1/2 cups flour
1/2 cup chocolate chips (optional)

In a medium bowl, combine the bananas, peanut butter, and sugars.
Add baking powder and salt. Stir.
Add flour in 3/4 cup increments, stirring after each addition.
Fold in chocolate chips.
Drop by large spoonfuls onto a greased cookie sheet. Flatten the top of each cookie with a rubber spatula.
Bake at 375 for 11-13 minutes. Makes 14 cookies.

ReplyDeleteI just happened to have two bananas that were going, and some leftover chocolate chips from another batch of cookies, and I stumbled across the recipe on tastespotting. It must have been destiny! My dad bought the wrong kind of brown sugar, so they turned out a little chewy... but despite that, they still turned out fantastic! I was worried the taste of the peanut butter would overpower the banana, or vice versa, but you do actually taste both of the flavours. I will definitely be making these again! :)
ReplyDeleteSimple and delicious. I window shop recipes via Tastespotting etc and this one was simple enough for me to make. It's fast and works a treat. I'd give the biscuits 4 out of 5 on day one and then 4.5 a day or two later, as they seem to get a little more moist.
ReplyDeleteThe only change I made was to use self-raising flour. It gave the biscuits a kind of cakey texture, making a wondefful kind of biscake.

ReplyDeleteI really loved the flavor of these cookies. The texture was not really what I think of as cookie-like, but more cake-like. As they sat for a few days they reminded me more of a banana bread. We made them in two batches. They weren't set within the 9-11 minute range. The first batch baked for 15 minutes and were better the second day. The second batch baked 20 minutes and were better the first day. These will be a staple in our house in the future.

Just made these - yummy! I agree they're more cake like, but in a good way. I swapped the quantities on the sugars because I was low on white, but it worked out fine. Might try without the chocolate sometime, too. I also found this recipe via tastespotting... you might consider tagging these as vegan. Thanks for the recipe!
